Control of Reactions by an Enzyme Used for Producing Food Materials


 
Collagen is the main structural protein of various connective tissues in animals. Today, acid-solubilized and/or  protease-treated collagens are widely used in food and cosmetics. We have been doing enzyme-chemical analysis of collagen digestion by pepsin to control the reaction.
